Macrum Chef's Knife specifications:
AEB-L stainless steel was patented by the German Uddenholm company in 1928 and has since been the go to standard for chef knives and razors due to its impressive balance of corrosion resistance, fine grain structure, edge stability and hardness
The Blade: The 7.25" AEB-L blade has a specialty heat treatment protocol reaching a Rockwell hardness of 62, combining a low maintenance stainless blade with a remarkably thin, sharp, and wear-resistant edge.
The Handle: The custom Richlite scales are a durable, waterproof handle material that are locked down with corby bolts and G-flex epoxy, so this handle should be able to withstand just about anything a kitchen can throw at it.
Care:
Hand-wash stainless steel knives immediately after use with warm soapy water. Dry thoroughly with a towel right away to prevent water spots and corrosion — do not air dry. Never place them in the dishwasher, as high heat and detergents ruin the edge and handle. Store securely in a knife block, magnetic strip, or sheath
Maintenance: Use wooden or plastic cutting boards; avoid glass, granite, steel, and bamboo. Use a ceramic honing rod regularly to maintain the edge.
Do not use for cutting bones, frozen food, or extremely hard items to avoid chipping.
