The yodeba is the Western-style version of the traditional Japanese deba, used for cutting meat and fish. The 70:30 bevel is oriented for a right-handed user.
Molybdenum gives this blade a super fine edge ability, these are thinner than their German counterparts and stay super sharp. The GM series is a great value and holds a fantastic edge. This stainless allows for a thin and stiff blade that is easy to care for.
This is a great entry level knife which holds a sharp edge. The molybdenum makes the blade hard and has a fine grain.
Hand engraved with the Kikuichi chrysanthemum logo.
Care:
Hand-wash stainless steel knives immediately after use with warm soapy water. Dry thoroughly with a towel right away to prevent water spots and corrosion — do not air dry. Never place them in the dishwasher, as high heat and detergents ruin the edge and handle. Store securely in a knife block, magnetic strip, or sheath
Maintenance: Use wooden or plastic cutting boards; avoid glass, granite, steel, and bamboo. Use a ceramic honing rod regularly to maintain the edge.
Do not use for cutting bones, frozen food, or extremely hard items to avoid chipping.
